ASADOR LA CASTILLERÍA
To reach this meat mecca, just outside the pretty Andalusian hill-top village of Vejer de la Frontera, you must go up an extremely small road, but it is well worth the effort.

You will find it is an idyllic setting amongst the trees, which ensures it is coolish on warm nights.

Juan Valdés and Ani Melero run the restaurant.

The restaurant is a selector, ager, ripener and steakhouse all in one. There are only a few of these around, and here they have their own theories about meat that differ from the majority's.

The obsession is to find and highlight the authentic flavours of the lean meat's muscle, not the infiltrated fats, in a way that reflects their feeding and ageing.
You will find aperitivos.

Grilled Avileña veal loin.
Grilled leg of suckling lamb from Aranda.

Suckling pig from Segovia.
Amongst the steak are:
Grilled Galician blonde beef sirloin (4-6 years)

Grilled Galician blonde beef sirloin (9-11 years old)

You can also find grilled loin of Fresian cow (Sevilla), grilled loin of Palurda cow (Leon) and F1 beef loin (blonde-Friesian).

They are real connoisseurs of the world of meats.
We were too full after all the meat to try any of their delicious desserts.
Sitting amongst the lovely canopy of trees, it is an excellent place for a long, relaxed meal.
It can be hard to get a table, so don't expect to walk in and get one.

They take bookings a year in advance, and bookings are only available by phone.
Hours for reservations:
Morning 11.30h to 13.30h
Afternoon 17.30h to 20.30h.
Friday morning is closed for rest.
