ACÁNTHUM One Michelin Star PERMANELY CLOSED 2024

After two years at San Sebastian's Arzak, Xanty Elias came home, determined to shake up Huelva's dining scene. His two tasting menus (from €75 with wine) only change twice a year. They may include pistachio, crumbled cookie and white chocolate dust, laid out as a map of the nearby marshes, and include palate-thrilling dishes like beef sirloin (solomillo) with spiced lard and tangy, mustardy mackerel with tender lupini beans. Each course can be paired with local wines, sherries or vermuts. There is also a chef's table for 6 in the room upstairs.

On our visit in September 2020, there was no tasting menu available, but they made one up for us from the à la carte menu and paired it with local wines.
To start, we had a few excellent olives,

with a Bodegas Sauci eSpinapura sparkling wine D.O. Condado de Huelva.

We were shown the upstairs chef's table, which can be booked for six people
