CAPOTE Y TOROS HAM & SHERRY BAR
We returned to the little offspring of Cambio de Tercio, where you will find this lively little tapas bar specialising in sherry and Jamón but also serving other delicious tapas.
From the small menu, you can try:
The wonderful 5J Cinco Jotas Jabugo Jamón Ibérico de Bellota.
Patatas bravas here are served in all of their 3 restaurants and tapas bars. Small new potatoes are topped with a smooth tomato bravas sauce and a luscious dollop of spiky alioli.
Nigiri de boquerón en vinagre y pimiento de piquillo con escabeche (baby anchovies and confit piquillo pepper in nigiri escabeche sauce).
Dorada soasada con yuzu, aji amarillo y uvas (blowtorched seabream yuzu, aji, and grapes).
Mini perrito de txistorra salsa kimchi (baby hot dog Basque chorizo in spicy kimchi sauce).
Lubina asada a la Bilbaína (grilled seabass Basque style with garlic potatoes, and cherry tomatoes).
Ganache de chocolate blanco y kiwi (white chocolate and kiwi ganache).
On a previous visit, we had,
Tartar atún (tuna tartar, avocado & grapefruit)
Bacalao Asado con Sobrassada (cod roasted with Mallorca’s famous, sobrassada & mange touts)
The carrilleras de cerdo Iberico (Iberico pork cheeks stew in Oloroso sherry & potato cream) are slowly cooked so the leaner muscles hold all the flavour, just as they are on the point of collapsing.
Tuétano Asado con Jugo de Ternera (Stunning roasted bone marrow with veal jus, which you can scoop with your spoon and place on the toast)
As always there is an excellent wine list, but it is the sherry list that makes its mark here, containing over 120 varieties with which to choose from.
You can try a “sherry flight” of fino, manzanilla, amontillado, oloroso, and moscatel to get a great introduction to this famous old wine, similar to the one shown below.
Also available are palo cortados, olorosos dulce, and the very sticky, prune-like, pedro ximenez (which is also great over vanilla ice cream).
Most evenings there is a live guitarist playing old flamenco music, which transports you to the back street tabolas of Jeréz de la Frontera, Cádiz, or Sevilla, which adds to the buzzing atmosphere.
Service is brisk, friendly, and professional and they have two sittings in the evening.
You can only book the early evening sitting, later on, you have to turn up and maybe wait at the bar.
