DEESSA Two Michelin Stars

Quique Dacosta has made his three Michelin-star restaurant in Dénia a destination venue. He has now opened a restaurant at the Mandarin Oriental Ritz in Madrid so guests can experience his talents in the Spanish capital.

The restaurant is in the beautiful and opulent Alfonso XIII room, which overlooks the Ritz Garden.

Diners are invited to taste one of two tasting menus designed by longtime Dacosta collaborator Chef Ricard Tobella.

Clásicos de Quique Dacosta, which has dishes from the restaurant in Dénia, and

Contemporáneo QDRITZ, which features the latest gastronomic creations.

Rosa y champagne manzana Rosé and apple champagne

Quisquilla de Xábea sobre kéfir y matices violáccos

Xábea shrimp with kéfir and violet tones

Saam de shiso, atun rojo y musgo estrellado

Shiso saam, red tuna and starry moss

Huevo cocida

Hard-boiled egg. The egg has an asparagus skin filled with trout roe and a yolk of beef stock.

Gamba Roja de Dénia The red prawn of Dénia, which is cooked in seawater

For the caviar and fish roe selection, you can choose from the three different fish roes.

Angulas y guisantes lágrima a la parrilla Grilled elvers and Basque tear peas (these are sometimes called green caviar)

Rodaballo repsado en Jerez

Turbot in sherry sauce with edible skeleton

Arroz cremoso de calamaritos y pimentón de la Vera

Creamy rice with baby squid and smoked pimenton
