After two years at San Sebastian’s Arzak, Xanty Elias came home, determined to shake up Huelva’s dining scene. His two tasting menus (from €75 with wine) only change twice a year and may include, pistachio, crumbled cookie and white chocolate dust, laid out, as a map of the nearby marshes and includes, palate-thrilling dishes like, beef sirloin (solomillo) with spiced lard  and tangy, mustardy mackerel with tender lupini beans. Each course can be paired with local wines, sherries or vermuts. There is also a chef’s table for 6 in the room upstairs. 

On our visit, in September 2020 there was not a tasting menu available but they made one up for us, from the a la carte menu and paired it with local wines.


To start, we had a few excellent olives,

with a Bodegas Sauci eSpinapura sparkling wine D.O. Condado de Huelva.

Agucate brasa, mango y anchoa (grilled avocado, mango and anchovy)

Bajo de piedra con pil-pil (stone bass in pil-pil sauce)

Jamón Ibérico de Bellota (top quality acorn-fed ham)

Presa de bellota con su jugo ibérico (acorn fed shoulder of iberico pork in its own juice)

Bizcocho cítrico, orange curd y helado de yogurt (citrus cake with orange curd and yogurt ice cream)

Paired with Misterio Orange D.O. Condado de Huelva

Los Montes de Paymogo

La torrija del pobre (poor man's bread and butter pudding)

Service was friendly and very informative.


We were shown the upstairs chefs table which can be booked for 6 people
